RUSSIAN SALAD TINT WITH SPIDER CRAB, PICKLED VEGETABLES AND SALMON ROE
The first step of this tasting menu in Malaga, a creative and balanced salad, far from the traditional recipes but nothing extravagant and of magnificent texture. The spider crab, somewhat covered by pickled vegetables, never loses the subtle presence in the mouth. And the dish complements the saline touch of roe, very successful, and a mayonnaise that never stands out and serves as a link to the rest of the ingredients.
ROASTED OCTOPUS SPATULA WITH VEGETABLES, CILANTRO AND SPICY TOUCHES
A classic Malaga summer kitchen updated brilliantly. The grilled octopus, of spectacular texture and unbeatable taste, was accompanied by an elegant brunoise of vegetables, cut with care and perfect size and a superb liquefied vegetable soup and octopus essence with great flavor and freshness.
OUR VERSION OF THE DISH OF THE MOUNTAINS, POACHED EGG, CRUNCHY CRUMBS, TORREZNOS, CHORIZO AND REDUCED STEW BROTH
A classic of sales that populate the sales of the mountains of Malaga. The protagonists of the dish, the crunchy texture of the crumbs and the excellent reduced broth, in perfect connection with the torreznos and chorizo, without excess fat intake.
COD FILLET AND CHIVES ON THE COALS WITH BASIL ALI-OLI AND ITS SHOOTS
A cod loin of ideal cooking and quality, in perfect harmony with the grilled onions. To top it off, a success and very grateful for the ali-oli in foam, which lightened the dish and never covered the fish, accompanying it very well with the freshness of the basil.
IBERIAN PREY TACO WITH EMBERS, OSMOTIZED APPLE WITH ANISE, CREAMY ORANGE AND CARROT PURÉE WITH BUCKWHEAT
As in the previous dish, product with a superb quality and a cooking point. Spectacular and fine the osmotized apple with anise, a very successful sweet surprise, full of flavor and that contrasted with the infiltrated fat of the prey and the citrus touch of the orange.
CANNELLONI OF GOAT FROM MALAGA, GRATIN, ITS JUICE AND PORTOBELLO ON THE GRILL
In a tasting menu in Malaga could not miss one of the most Malaga-style meats that exist. Perfect point and full of that characteristic flavor. Softened by the soft béchamel that covered it. Texture and delicacy of the portobello, which is integrated into the dish by the strength of the grill.
BROKEN COOKIES WITH CREAMY HAZELNUT PRALINE, VANILLA FOAM AND CHOCOLATE “MACHACAO”
