TRADITION AND AVANT-GARDE AT THE HAND OF PABLO TOMAS

Pablo Tomás, an exceptional chef
The Aragonese chef Pablo Tomás, after going through the kitchens of large restaurants such as El Bulli, Arzak or Via Veneto, took over the cuisine of the Gallery Group. First, he was commissioned to start the Salicornia Restaurant in Colonia Sant Jordi de Mallorca. Shortly afterwards, he was commissioned to start the kitchen of the Sintonía Restaurant that the same group opened in the center of Barcelona. And in both it has distinguished itself by granting them their personal seal.
If there is one thing that distinguishes the chef’s work, it is his constant search for perfection and detail. For example, the Salicornia Restaurant menu is a seafood restaurant based on fresh local produce. But as Pablo Tomás himself tells us: «We tested seven different seafood suppliers before being satisfied with the quality. Now we buy fish from a company in Sóller ».
